Bonnie's Aggressive Muffin (from Cursed)

The muffin itself, of course is not aggressive. It's just that Bonnie was being aggressive when she ate this in the book, and I had no other way to describe it. The muffin is actually quite pleasant.

Ingredients
​Muffins
1 1/2 c flour
3/4 c sugar
1/2 tsp salt
2 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/3 c vegetable oil
1 egg
​1/3 c milk (I used unsweetened almond, but you can use any variety)
​1 tsp vanilla

Topping
​
1/2 cup rolled oats
1/2 tsp cinnamon
1 1/2 tsp sugar
Honey (optional to serve)
Process:
Preheat the oven to 400 F.
Mix flour, sugar, salt, baking powder, cinnamon, and nutmeg. In a separate bowl (or in the measuring cup if you like to avoid extra dishes as much as I do), whisk together oil, egg, milk, and vanilla. Add wet mixture to dry ingredients and whisk until the batter is smooth.
In a small bowl, mix together oats, cinnamon, and sugar.
Prepare a muffin tin with liners. Fill about 3/4 of the space for each muffin. Top with a sprinkle of the oat mixture.
Bake for 15-20 minutes, or until a toothpick comes out clean. Serve warm or cold with a drizzle of honey over the top. Enjoy!
The Inspiration
Despite being bone-weary after her long day of research and exploring the streets of Pliridge, Bonnie couldn’t sleep that night. Her thoughts raced, and every time she closed her eyes, images of full mahogany shelves flashed in her mind. No amount of tossing and turning brought her to a comfortable position. Eventually, she gave up on achieving any real sleep and simply stared at the ceiling of Kade’s spare room, ideas swirling in her mind like snowflakes in a blizzard.
The next morning, Kade came out of his room to find Bonnie already sitting at the kitchen table. After a long swig of coffee, she set her mug down with a thunk. “You,” she said, gesturing at him with a half-eaten muffin, “are going to find Tirion the Messenger and bring him to the library. I have some serious words for him.”
