Centaur Flatbread & Greens (from Ashes)

The perfect light meal for recovering travelers! (And it pairs wonderfully with centaur mulled tea!)

Ingredients:
Dressing​ (for 2 servings of greens)
1 Tbsp. olive oil
1 Tbsp. honey
1 Tbsp. balsamic vinegar
2 Tbsp. Dijon mustard
Salad
Mixed greens
Dried fruit (cranberries, chopped apricots, etc.)

Flatbread (8 rounds)
1 c Greek yogurt
1 3/4 c all-purpose flour
2 tsp. baking powder
Salt & pepper to taste
​Optional: sage or other fresh herbs
​Olive oil to bake
Process
Preheat the oven to 425 F.
For the flatbread, combine the Greek yogurt, flour, and baking powder in a bowl until a shaggy dough forms. Add in the salt, pepper, and any herbs you like (I used fresh sage because my plants were dying and I wanted to use as much as I could). Finish mixing with your hands until you have a nice, cohesive dough ball. Roll the dough into a log and divide that log into 8 sections. Roll each section to about 1/8 inch thickness (you can make these perfectly circular if you want, but I personally failed at that and they still tasted delicious). Drizzle a liberal amount of olive oil on a cookie sheet and make sure it is coated evenly. Bake the flatbreads for 10 minutes, flipping halfway through.
While the flatbreads are baking, prep your greens. Any assorted greens will work. I used a spring mix (spinach, lettuce, etc.) and chopped it roughly so I was working with smaller pieces. Dried cranberries or apricots are great options for fruits, but you can chuck in whatever you'd like. For the dressing, combine the olive oil, honey, Dijon, and balsamic. Ideally, stick them in a jar with a lid so you can just shake them up instead of stirring or whisking. Toss the greens with the dressing.
Once the flatbreads are done, let them cool. You can have them warm, but the hot bread and cold salad mix doesn't do it for me. You can eat them separate, or pile the greens on the flatbread. Enjoy!
The Inspiration
The centaur nodded slowly, and a slight smile spread across his lips. “Well, we will have to see about your cause, but I have always found that it is better to eat first and address the business later. So, for now, I will just tell you that my name is Runach, and you are welcome at my fire.”
Ember was quickly enchanted by the centaurs. They sat on the ground near the fires, digging into a heaping bowl of dark, hearty greens with some sort of tangy dressing. This dish was accompanied by a round of flatbread to scoop the greens into. Mugs carved from wood were filled to the brim with a smooth, mildly sweet drink that warmed them from the inside out. As they ate, the centaurs told stories that Ember had never heard before- beautiful stories about centaurs in the past. And all around her the atmosphere was full of laughter and warmth and a strange sort of energy that seemed to crackle from person to person.
