This is your fair warning that you are likely to fall in love with this focaccia... and possibly want to run away to a cozy sanctuary hidden in an old forest so you can be friends with the people who make it.
Ingredients:
2 1/4 tsp active dry yeast
2 c warm water
2 tsp salt
4 c all purpose flour
Olive oil
Dried sage & parsley (or your choice of herbs)
Course salt, pepper, & ground nutmeg
Process:
Combine the water, yeast, and salt in a mixing bowl. Add the flour and mix until a sticky, shaggy dough forms. Transfer the dough to a lightly oiled bowl, cover with a towel, and let rest for 1-2 hours (or until it looks nice and soft and puffy).
Place the dough on a baking sheet and spread out evenly. Don't stretch it too much... it shouldn't be too thin of a layer. Drizzle a generous amount of olive oil over the top. Spread the oil and dimple the dough with your fingers. Sprinkle the dried herbs, coarse salt, pepper, and just a little bit of nutmeg over the surface. You can go for round two of dimpling to make sure all the toppings are set in the dough.
Bake at 400 F for 30-35 minutes, or until golden brown and cooked through. Try it paired with the Golden Soup!
The Inspiration:
Reina sat at the rustic wood table, enjoying a creamy golden soup paired with salty, herbed bread. It was simple food, the kind of meal Nerine scoffed at “commoners” for eating. But it was heavenly to Reina. It was warm and flavorful and comforting, and, for the first time in years, Reina felt completely safe. She wondered if she could stay in this isolated haven forever.
“You seem thoughtful.” Galena’s soft, lyrical voice broke through Reina’s thoughts.
“I…” Reina hesitated. She still hadn’t told them much about who she was. “I was just wondering how long I’ll be able to stay here.”
Nakia reached out to place a gentle hand on her wrist. “We call it a ‘sanctuary’ for good reason,” she said. “You’re welcome as long as you want to be here.”
Reina allowed a small, grateful smile, and they continued their meal in silence. The window in the dining room was open to allow Doran and Ziva to join the group for dinner. The centaur and griffin ate from the windowsill while everyone else ate at the table. Mico perched on a stool next to Nakia and stole extra morsels of food from her plate any time she wasn’t looking. It felt good. Like home and family.
