Yarah's "Quail" & Greens (from Cursed)

Full disclosure: this is not quail because I have never cooked a quail before and honestly I don't intend to do that. It's just chicken. But it is delicious and may have secured its spot as my new favorite book recipe that I've made.

Ingredients
2 boneless, skinless chicken thighs
1 tsp garlic powder
2 tsp onion powder
Sprinkle of nutmeg (to taste)
10 oz bag of fresh spinach
1-2 Tbsp unsalted butter
Onion powder & black pepper, to taste

4 tsp orange marmalade
2 Tbsp soy sauce
2 tsp minced garlic
2 tsp honey
Process
Preheat the oven to 400 F.
Mix together garlic powder, onion powder, and nutmeg. Rub onto all sides of the chicken thighs. Bake for 25-30 minutes.
​While the chicken cooks, mix together orange marmalade, soy sauce, minced garlic, and honey.
Take the chicken out and brush some of the soy sauce mixture on, leaving some remaining to finish the dish. Increase the oven to 425 F and put the chicken back in for 5-10 more minutes. Check to make sure the chicken is completely cooked once the time is up.
In a pan over medium heat, melt butter. Add in spinach. Cover and let cook until slightly wilted. Sprinkle with onion powder and black pepper. Continue to cook, tossing occasionally until wilted to your preference.
Serve the chicken over a bed of spinach and top with the remaining soy sauce mixture. Tastes best in the company of some friends and one person who you are desperately trying not to fight.
The Inspiration
As Yarah moved to dish their dinner from the stove, Akiro wiggled his fingers in a friendly wave from where he sat at the table. He had his long legs stretched out in front of him, crossed casually at the ankle. The lantern light glinted off his short black hair and highlighted the deeper tones of his dark skin. It was impossible to not feel welcome at the table with his wide smile.
Shortly after Bonnie sat, the door opened to reveal a truly massive man. Since he was the only one she had not yet met, she figured it must be Amell. Stepping into the confines of the kitchen, he looked almost comically large. Bonnie estimated he was at least a decade older than her father, although clearly undaunted by hard physical labor, judging by his broad, muscular frame and only slight paunch. His cobalt blue eyes looked her over once, and he gave a quick nod in greeting. He didn’t seem unhappy, but the sandy-haired man certainly wasn’t as openly friendly as Akiro.
“Here we are,” Yarah said as she set a tray of four plates in the middle of the table. Each plate had a small quail nestled in a bed of steaming greens with a golden roll on the side. Although the only feature to suggest Yarah’s age was the touch of gray hair around her temples, it was clear she had many years of experience with cooking. Bonnie’s mouth watered at the aromas drifting up from her plate.
